I usually do really intense pumpkin carvings, but this year both boys got to help. So, we went with simplicity and something Henry can say: CAT!

Lasagna Delivery Day
I made a ton of lasagna the other day and we spent Monday evening delivering them to a couple families in our congregation who are experiencing some hard times. It was fun to see them, their homes, and their lives outside of church.

The Calm and the Storm
A weekend of fun, relaxation, exhaustion, and hurricane crazy. Prof Pulse stayed with us and it was so nice to seesomeone who knew us before. Praying for all those on our coast being hit by Hurricane Sandy right now.

Chocolate Covered Everything

Mountains
A family from Mt Calvary treated us to a day trip with their family to the mountains. It was fun, relaxing, and gorgeous. North Carolina really has it all in terms of God's amazing creation...ocean, beaches, dunes, mountains...so amazing!

3D Dolphins!
Solomon and Henry experienced their first 3D movie. It was a 20 minute documentary on dolphins at Discovery Place. Solomon kept yelling, "Dolphin! Whoa!" and trying to catch them in the air.

A Healthy Breakfast
Do this. Seriously, right now. Delicious. Healthy. Don't feel bad about muffins everyday. Unless you are gluten free. You should stop reading now as to not tempt yourself into this.
WHOLE WHEAT BLUEBERRY AND BANANA MUFFINS
No egg or butter used!
This recipe made a small loaf of a cake/bread/muffin and 6 muffins.
Ingredients:
2 cups old fashioned oats
1 1/2 cups whole wheat flour
1/2 cup all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
1/4 cup light brown sugar
1/4 cup sugar
2 tablespoons ground flaxseed (plus 6 tablespoons water) (as egg substitute)
1 cup skim milk
1/4 cup unsweetened applesauce
2 pureed ripe bananas
2 teaspoons vanilla
2 cups blueberries
Mix all wet ingredients in one bowl. Mix all dry ingredients in another larger bowl. Fold wet into dry. Mix in blueberries. Pour into pre-sprayed muffin tins and/or small bread baking dish. Bake at 400 degrees for 25 minutes (for muffins) or 35-45 minutes (for bread pan).
This morning these muffins and loaf fed our Bible Study of 12 people.

See You in Six Months...
...Not six years.
Going back to the dentist was scary and expensive, but I totally "bored" them with my clean bill of health. They were jokingly hoping for a root canal or something...sorry to disappoint!
I also learned that the roots of my teeth are nearly twice as long as the average person. There is something you really needed to know.
Gas Station China
My dad's labor of gas station fill-ups looks very pretty with his labor of BBQ brewing on top. Although, what a mess to handwash. This was Monday's meal for a person from our church.
