I made this recipe up and they are delicious. Plus, they are way healthier than the average cookie. Give it a try...I dare you. Note: I sometimes don't measure totally accurately (and sometimes I cook with a toddler), so these measurements are educated calculations of pinches and cups!
Ingredients:
3/4 cup light brown sugar
1/2 cup honey
3 Tbls liquid egg whites
3 Tbls ground flaxseed
1 tsp vanilla
2 pureed bananas
2 cups whole wheat flour
1 tsp baking soda
1/4 tsp salt
1 12 ounce package semisweet chocolate chips
Directions:
Preheat oven to 375
Mix sugar, honey, egg whites, flaxseed, vanilla, and bananas in large bowl.
Stir in flour, baking soda, and salt. The mixture will be stiff.
Stir in chocolate chips.
Spoon onto cookie sheet about two inches apart (heaping tablespoon for each cookie).
Bake for 12-15 minutes until tops turn golden brown. These are a soft cookie and should not be over-baked. Soft centers are good.
Finally, eat and don't feel terrible about doing it. Sure, they have chocolate and some brown sugar...but no butter, no oil, egg whites only, replaced sugars with honey, whole wheat flour, flaxseed, and bananas...DELICIOUS! My best creation so far. My husband gave them a 9 out of 10 for chocolate chip cookies. Pretty good for a healthy alternative!
